ON JUNE 16, 2024, Chef Bambi Lim of Le Culinaire International Culinary Arts Institute embarked on a tour where he learned innovative methods for the Culinary Arts Program of the Institution.
The Culinary expedition began in Orlando and Miami, Florida, in cooperation with PKI Group, the company that launched thousands of professional kitchens including that of Chef Gordon Ramsay’s Hell’s Kitchen.
The experience exposed Le Culinaire to new trends in tools and equipment, its uses and efficiency as well as proper formatting of kitchen layout that is mandatory under HACCP Policies (Hazard Analysis & Critical Control Point) with zero level of metal components and 100% stainless panels and counters.
Despite high restrictions, Chef Bambi was given the privilege to see the whole production area of Gordon’s Kitchen!
The next stop was Pittsburgh, exploring historical restaurants and diners where aesthetics is not the only priority but the food itself! The Steel City, which comprises 446 Steel Bridges has rich Western delicacies like Pamela’s simple pancake cooked crispy with precision.
The highlight of it all was that internationally accredited Chef Bambi Lim represented the Philippines in the prestigious American Culinary Federation Convention held at the Phoenix Convention Center last July 14-18, 2024, in Arizona, USA.
There were more than one thousand delegates including culinary educators, industry chefs, also chefs from the US Air Force, US Navy, US Army, and US Coast Guard. Lectures on Asian cuisine, HACCP, and culinary medicine were given. “And the exciting experience of the lavish trade show where foie gras was just within your reach!” shared Bambi.
Presenters of the ACF 2024 were of par excellence. Inputs were based on lifetime experience and excerpts from the book they had written. The new trends in culinary medicine, featuring Chef Jim Perko Sr., Dr. Michael Roizen, Chef Martin Yan, Chef Jet Tila from the Food Network for Asian Cuisine, and many more certified MasterChefs!
Chef Bambi, learning from the legends, made her professionally, a part of the World Association of Chefs Societies and the American Culinary Federation.
“All of these I do for Le Culinaire graduates and students, to inspire them, that this career will open new horizons and opportunities not just for economic advantage but lifestyle too! It will offer you the world. Get up, get out, explore, be present, be aware, savor the adventure, be excited, be curious, be involved, and stay hungry for new learnings. No one will give you the table, create one,” Chef Bambi said.
Le Culinaire will soon offer a one-year program for culinary arts, patisserie, and culinary medicine.
